In simplest terms, freeze drying is the process of removing frozen liquid from a product using sublimation. Sublimation happens when water transforms directly into a gaseous state without passing back through the liquid phase. 

This process happens in three phases: 

• Pre Freezing – the materials that make up the food need to be pre-frozen below its eutectic temperature. The product may seem frozen, but keep in mind that although it may appear to be frozen, it is not until all the solute is frozen as well. 
• Primary Drying – once the material has been pre-frozen, ice will need to be removed through the process of sublimation. This is done by controlling two parameters; pressure and temperature. 
• Secondary Drying – after the process of primary drying is complete, there may still be some moisture remaining in the product. This leads us to a process called isothermal desorption. The excess moisture will be absorbed by making the temperature higher than the ambient temperature. 

Each stage of the freeze drying process is equally important. From step one to the very last step, it is essential to follow these steps to ensure the product is sufficiently free from moisture. This is why it is a ‘drying process.’
