What Are Freeze-Dried Candies?

You've probably heard of eating dehydrated fruits like mangos, apples, pineapples, and more. This method uses heat to remove water — thus the term "dehydrate." 

Using heat to dry out candy is ineffective, as it melts the product or makes it super sticky instead of dehydrating it. Heat-drying candy also completely changes the flavor during the process.

Instead, candy is best preserved by freeze-drying. Freeze-dried candies are just normal candies that have undergone the freeze-drying process. This preserves them by removing all the water, making whatever comes out dried and crunchy. Freeze-drying candy is a highly effective way to preserve aromas, color, and the delicious flavor of candies. 

In some cases, the flavor of freeze-dried candy is the same as their original, hydrated versions. Like freeze-dried Skittles, these taste the same as standard Skittles, but the freeze-dried version is crispy and has expanded a bit in size. In other cases, the flavor seems to be amplified, like in Jolly Ranchers or Airheads.

The texture is the most noticeable difference between normal, hydrated versions and a freeze-dried version of candy. 

As moisture freezes at an extreme rate, the water molecules expand, causing the candies to swell or grow and become more puffy-like in appearance. It’s similar to an aerated foam or sponge. Despite the hard, solid appearance, freeze-dried candies' airy texture will melt in your mouth!

  • Jolly Ranchers are a tasty treat, but normal jolly ranchers — ones that haven't been through the freeze-drying process — can be hard on your teeth and jaw! Freeze-drying Jolly Ranchers turns the classic sweet into puffy, light, and airy bursts of flavor! 

    Eating these offers a pleasantly intense flavor burst in your mouth! We're not exactly sure why the flavor seems to multiply, but it is something you need to experience to understand. It's awesome!

  • Freeze-Dried Salt Water Taffy
  • If you are in the market for a fun pastel-colored candy with an uber-crunchy texture, then freeze-dried salt water taffy bits are for you. These come out with an intensified flavor and a light and airy texture that starts out crispy and then becomes chewy — truly an exciting and unique experience!

  • Freeze-Dried Milk Duds

    Snacking on freeze-dried candy corn won't look like much has changed since it doesn't expand like other freeze-dried candies. However, you'll find that the flavors become a bit more intense, and the texture is significantly affected, similar to a corn nut. Maybe we should change the name to "candy corn nuts."
